Pudding

This just blows my mind.

Okay, hold up—did you know you can just make pudding? Like… from scratch? With normal pantry stuff? I always thought pudding came from a little box of mystery powder, but nope. You can whisk it up yourself in minutes and it’s ridiculously good. Below is my vanilla pudding recipe—and chocolate fans, don’t panic, there’s a version for you too!

Ingredients explained:

  • White sugar - Gives sweetness to the pudding. If you want to try a different sugar or sugar alternative it should work but may alter the color and/or flavor.

  • Cornstarch - This is what helps to thicken the pudding, or else it would be soup!

  • Cocoa - Add this if you’d like chocolate flavour.

  • Milk or milk alternative - I use whole milk for the best flavor, but use what you have.

  • Vanilla & salt - Flavor.

  • Butter - Flavor and creaminess.

Ingredients

  • 1/3 cup white sugar

  • 4 Tbsp cornstarch

  • ½ tsp salt

  • 2 cups cold milk or milk alternative

  • 2 tsp vanilla

  • 1 Tbsp butter

    To make chocolate pudding:

    • add 2 Tbsp cocoa

 

Directions

  1. In a saucepan, whisk together the sugar, cornstarch, salt, (cocoa, if making chocolate pudding), milk and vanilla.

  2. Continue stirring over medium heat until boiling. Let it boil for 1-2 minutes to thicken.

  3. Take off the heat and whisk in 1 Tablespoon of butter.

  4. Let sit for 5 minutes to thicken. Serve immediately.

Makes 2 cups of pudding. For the best consistency, eat immediately as it will thin out if stored in the fridge. If you have leftovers, freeze in popsicle molds and make pudding pops.
