Poured vs Pulled Lollipops - What’s the Difference?

If you thought all lollipops were created equal, think again! While they might both be sweet, colourful, and delicious, poured lollipops and pulled lollipops are different in preparation resulting in a different look.
What Are Poured Lollipops?
Poured lollipops have a clean and smooth finish and take on whatever shape you pour them in to.
Poured lollipops are made by heating sugar, corn syrup, and water to a high temperature- 300°F (the hard crack stage). Once the mixture reaches the right temperature, it’s flavoured, coloured, and carefully poured into molds. After cooling, the result is a glossy, glass-like candy that’s smooth, shiny, and perfect for showcasing vibrant colors or fun designs.
Points For Poured Lollipops:
They can be crystal clear, making them perfect for intricate designs or embedded decorations (think edible flowers or sprinkles).
They are incredibly smooth giving them a lovely mouth feel.
They’re great for custom shapes since they’re made with molds.
Bonus: If you’re just starting out, poured lollipops are much easier to master than pulled ones!

What Are Pulled Lollipops?

Pulled lollipops, on the other hand, take candy-making to the next level with a bit of old-fashioned elbow grease. The sugar mixture is cooked the same as poured lollipops but once the right temperature is reached and the colour and flavour are added, it is then poured onto a surface, cooled slightly and then stretched repeatedly. This pulling process aerates the candy, giving it a more opaque, satiny appearance and a slightly lighter texture.
Points For Pulled Lollipops:
The pulling process creates a stunning, pearlescent sheen.
Traditional candy makers often hand-pull and form them, making each piece a work of unique art!
