Copycat Eatmore Bars
There’s something nostalgic and comforting about the foods we loved as kids.
For me, the Eatmore bar is right at the top of that list of childhood favourites. Growing up, it was my go-to treat whenever we’d head out fishing for the day. Packed with peanuts and chewy goodness, it gave just the right boost of energy but also felt like a special treat.
What I’ve always loved about the Eatmore bar is that it somehow feels a little healthier than your average chocolate bar—less sugar rush, more satisfying chew. It’s loaded with protein-rich peanuts and has that deep, molassesy flavor that really sticks with you (in the best way). This homemade version brings all that nostalgic taste back, with simple ingredients you can feel good about.

Ingredients Explained:
Corn syrup - This helps hold the bar together and also give it some sweetness, but not too much. Use light or golden, whatever you have on hand. You could also use honey, but be warned it most likely will taste sweeter and not taste true to the original version.
Molasses - I used dark molasses, but use what you have. Blackstrap molasses will give a more robust flavour.
Peanut butter - I used smooth peanut butter, but use crunchy if you prefer. I would not use natural peanut butter as it most likely will split.
Chocolate chips or baking chocolate - Use chocolate chips or baking chocolate for the lower cocoa butter content. Semi sweet will give you the truest flavour, but if you prefer dark or milk, then go right ahead.
Vanilla - This adds some depth of flavour, use natural vanilla for the most flavour.
Peanuts - I used salted peanuts and would recommend that to cut through the sweetness. If you use unsalted peanuts, consider adding about 1/4-1/2 tsp of salt when you add vanilla.

Copycat Eatmore Bars
Ingredients
3/4 cup corn syrup
1/4 cup molasses
3/4 cup peanut butter
2 cups chocolate chips
1 teaspoon vanilla
1 1/2 cups salted roasted peanuts, coarsely chopped
Sea salt
Directions
Line an 8x8 or 9x9 pan with aluminum foil or parchment paper. Alternatively, use a silicone pan. Coarsely chop peanuts and roast in a 350F oven for 5-7 minutes.
In a medium saucepan over medium heat, bring the corn syrup and molasses to a boil while continuously stirring.
Add the peanut butter and stir to melt and incorporate. Then add the chocolate chips and vanilla. Stir to melt and incorporate.
Let the mixture cook for 5 minutes while stirring.
Take off the heat and add peanuts.
Pour into the pan and then sprinkle with sea salt if desired. Let it cool and set at room temperature for 3-4 hours then cut into bars.
Makes 30-40 bars. Store in the fridge for several weeks. Store in the freezer to last for several months.
